Out of all the names that exist for a restaurant, we decided to choose something that reminds us of our home, México.
Carnaval Mexican Grill comes from a tradicional event that happens in the city of Autlán, Jalisco, México. The town where Emmanuel Medina (Head Chef) is from.
In this festival, a lot of people from different parts of the country unite to see the main attraction, bullriding.
Several Bullriders (Jinetes en Español) come to this event to test their abilities, since they say between the common folk, that it's where the best of the best bulls from México are brought.
So it's no small event
Since we wanted to bring that positive energy and great food to Redmond, Oregon, that is the final name we decided to go with.
Now you know why we decided to use Carnaval as our restaurant's name.
